Risotto alla zucca e castagne con cialde di Parmigiano Rice with pumpkin and chestnuts and Parmesan waffle



Eccoci, finalmente,  alla ricetta del primo piatto del menù
"Cenetta romantica a 2 - Autunno": Risotto alla zucca e castagne,
con cialde di Parmigiano. E' una mia rielaborazione del classico risotto con la zucca, ed è -lo so, non sono proprio imparziale- davvero delizioso: si sentono proprio tutti i profumi dell'Autunno!
Avevo promesso un video, ma, ahimé, non è riuscito affatto bene e quindi,
per vostra fortuna, mi limiterò a descrivervi questo piatto fotograficamente ;).
Finally here we have the recipe of the first course regarding our
menu "Romantic dinner for 2 - Fall": Rice with pumpkin
and chestnuts and Parmesan waffle. It's a version of mine of the "Rice with pumpkin" and - I know, I am not just disinterested- it's really delicious: you can smell and taste all the scents of Autumn!
I promised you a video, but, unfortunately, it didn't come out well, therefore,  you lucky, I limit myself to describe this dish photografically ;).

Ingredienti per 2: un pezzetto di zucca (anche già pronta, cotta a vapore), una decina di castagne morbide (già pronte sottovuoto), un cucchiaio di burro, 2 cucchiai di olio extravergine di oliva, 1/2 cipolla, una tazza (da té), non colma, di riso Super Arborio fine, mezzo bicchiere di vino bianco e 3 cucchiai di parmigiano reggiano. Per le cialde: 2 cucchiai di parmigiano per cialda.

Ingredients for 2: a little piece of pumpkins (even ready made), ten tender chestnuts (even ready made), 1 spoon of butter, 2 spoons of extra virgin olive oil, 1/2 onion, a teacup almost full of Super Arborio fine Rice, 1/2 glass of white wine and 3 spoons of Parmesan cheese. For the waffles: 2 spoons of Parmesan for each waffle

Mettete in una pentola l'olio e il burro con mezza cipolla tritata
finemente (img. 1). 
Quando appare tenera, aggiungete la zucca e le castagne tagliate
in piccoli pezzi, secondo i vostri gusti, e lasciate soffriggere il composto leggermente 
(img. 2 e 3). 

Put in a pot the oil and the butter with the half onion finely chopped
(img. 1).  When it appears tender, add the pumpkin and the chestnuts chopped into small pieces, as you required,  and let the mixture fry
slightly (Img. 2 and 3) .

Quando diventa tenero, aggiungeteil riso e lasciate soffriggere ancora per un po' (img. 4). Successivamente versate il vino bianco e lasciatelo sfumare (img. 5). Salate e pepate il riso (img. 6).
Poi versate acqua bollente, fino a riempire la pentola e aggiungete un dado (io uso quello vegetale, in gelatina)
 (img. 7). Lasciate il riso bollire, mescolando di tanto in tanto.

Nel frattempo preparate le cialde di Parmigiano: create alcuni piccoli mucchietti con il formaggio (2 cucchiai di Parmigiano per mucchietto) sulla carta da forno. Poi mettete sulla teglia  e nel forno per 5 min. a 180°/200° (nel microonde solo 3 min. con la funzione "Crisp") fino a quando il Parmigiano si scioglie e forma
dei dischi. Lasciateli solidificare (img. 8 e 9). Nel frattempo, aggiungete
3 cucchiai di parmigiano anche nel risotto e mescolate molto bene
 (img. 10). Completate la cottura, secondo i vostri gusti.

In the meanwhile prepare the Parmesan waffles: create some little
piles with the Parmesan (2 spoons per pile) on the bakery paper.
Then put the baking tin in the oven for 5 min.  on 180°/200°
(in the microwave only for 3 min. with the"Crisp"function)
until the Parmesan melts and forms some discs.
 Let them get solid (Img. 8 and 9).
 In the meantime, add 3 spoons of Parmesan to the rice and mix it up
very well (img. 10).  Finish the rice cooking as per your taste.

Guarnite la porzione di riso con la cialda di Parmigiano e una castagna,  secondo il suggerimento qui sotto (img. 11).

When it gets tender, add rice and let it fry for a while (img. 4).
Then pour the white wine and let it steam (img. 5). Salt and pepper the rice (Img. 6). Afterwards pour  the hot water until you fill the pot up and add a stock cube ( I use the vegetable one) (img. 7). 
Let the rice boil, stirring occasionally.

E allora ...seguitemi in cucina!!




Benvenuti!


Nel mio blog vi descriverò, ogni volta che mi sarà possibile e in poche ma chiarissime mosse, documentate fotograficamente,  un nuova e sfiziosa ricetta, così che possiate comporre, di settimana in settimana, a vostra discrezione e secondo le varie occasioni,  menù completi e 
di gusto giovane e internazionale. Utilizzerò tutto ciò che serve per velocizzare la preparazione dei piatti e garantirne la massima resa in un così breve tempo: paste, salse e sughi pronti, cibi surgelati, metodi di cottura rapidi (ma saranno indicati anche i tempi di cottura con mezzi tradizionali). Vi svelerò anche qualche mio piccolo “trucco" per una presentazione in tavola da veri "chef"!...Oh, bè,  quasi chef…;).
Le dosi degli ingredienti saranno indicate in "cucchiai", "cucchiaini", "tazze", unita' o sue parti ( es: 2 tazze di,  un quarto, mezzo, uno spicchio di limone) - perché, questo è certo: chi ha fretta non ha davvero tempo per tirare fuori dosatori o bilance! - e si riferiranno alla singola porzione. A voi il compito di moltiplicare le stesse in base al numero dei vostri invitati! E allora... seguitemi in cucina! Ma state al passo, mi raccomando, perché qui si va sempre di fretta!

In my blog I’ll describe you, whenever possible and in few and clear moves, photographically documented, a new savoury recipe, so that you can compose, week by week, according to your preferences and different occasions, complete menu satisfying a young and international taste. I’ll use everything needed to speed the dishes preparation and ensure the optimal succeeding in such a short time: ready sauce, kneading and dressing, frozen food, rapid cooking methods (even if also traditional ones will be indicated). I’ll also unveil you some little tricks of mine, for a final presentation as a real “Chef”! Well, almost chef…;)
Ingredients doses will be indicated in “spoons”, “teaspoons”, “cups”, unity and its parts   (for exemple: 2 cups of…, a half, quarter, slice lemon) – ‘cause it’s certain: who is in a hurry hasn’t got time to use measurer or balance at all!! – and they refer to the “single portion”. Your task to multiply them according to the  number of your guests! Well… follow me to my kitchen, now! But keep pace, dear….. here we are always in a rush!
